The transformation of Dates juice to vinegar is a chemical process in which ethyl alcohol undergoes partial oxidation that results in the formation of acetaldehyde. In the third stage, the acetaldehyde is converted into acetic acid.
The chemical reaction is as follows:
CH 3 CH 2 OH=2HCH 3 CHO=CH 3 COOH.
Fermentation ethanol :
Intended to convert sugar unilateral with dates, into ethanol using the yeast, the most important of baker’s yeast.
Acetic fermentation :
Intended to convert ethanol to acetic acid, the addition of vinegar, non-sterile (virgin), it contains acetic acid bacteria, which convert the alcohol to acetic acid by (1 to 10) of the volume of ethanol.
The production of vinegar, needs to ferment period of 40 days.
Starting from 4000 liters every 40 days, until 40.000 liters.
